Ring in the new year with these JOJO's-stuffed peanut butter cookies. Made with only 8 ingredients, you'll want to whip up a batch of these weekly—trust us!  vegan  new years cookie recipe

Filling Ingredients:
  • 2 cups gluten-free oat flour
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 cup coconut sugar
  • 3/4 cup peanut butter
  • 1/4 cup unsweetened applesauce
  • 1/4 cup + 1 tablespoon maple syrup
  • 3 JOJO's Peanut Butter Delight Bars, cut in fourths
  1. Preheat oven to 350-degrees
  2. Mix together all dough ingredients
  3. Roll dough into balls and place a fourth piece of JOJO's Chocolate into the center and close dough ball around the chocolate
  4. Roll into a smooth ball and place cookies on a parchment-lined baking sheet
  5. Bake in the oven for 16-18 minutes
  6. Remove cookies from the oven and let cool for 5-minutes
  7. Top with flaky sea salt
  8. Enjoy!
