Gluten Free Raspberry Dream Sugar Cookies

RASPBERRY DREAM Sugar Cookies 
Gluten free | Refined Sugar Free | Kicks Sweet Cravings 
INGREDIENTS
Cookies: 
1 cup Wholesome Allulose sweetener or sweetener of choice 
1/2 cup butter, softened
1 large egg 
1 tbsp nut milk 
1 1/2 tsp vanilla 
1 tsp xanthan or guar gum
Jam:
1/2 cup raspberries
1 tbsp chia seeds
1 tbsp honey 
1 bar JOJO's Raspberry Dream
Frosting:
4 oz of Nancy's Probiotic cream cheese (or regular cream cheese)
1 tsp vanilla extract
1/4 cup butter, 
DIRECTIONS
Cookies:
Cream the sugar and butter. Then add the egg, milk, vanilla. Next add the xanthan gum and flour. Mix until well combined. 
Cover this mixture and refrigerate for at least one hour. In the meantime, make the jam and frosting below. 
Jam: 
In a small bowl mix together 1/2 cup raspberries, 1 tbsp chia seeds, and 1 tbsp honey. Mash for a few minutes until smooth like jam, and set aside in fridge. 
Frosting: 
In a medium sized bowl mix together 4 oz of Nancy's Probiotic cream cheese (or regular cream cheese), 1 tsp vanilla extract, 1/4 cup butter, and 1 3/4 cup Swerve Confectioners Sugar. Let this frosting set in fridge. 
To finish: 
Preheat oven to 350 degrees F. Roll out the dough to about 1/4 inch. Use top of glass cup or cookie cutter to cut out circles. Place cookies on baking sheet with parchment paper. Bake for 9-11 minutes. Take out the cookies when slightly golden on top... they may not look done but let them cool on sheet and they will harden, but still be perfectly chewy. 
When cookies are cooled, add dollops of raspberry jam to each cookie. Then spread on cream cheese frosting.
Next chop the JOJO's Raspberry Dream bar up finely and sprinkle on top of each cookie. Eat within 1-2 days for freshest taste! Enjoy :)
