Peanut Butter Caramel Chocolate Bars

Gluten-Free shortbread cookie crust topped with a creamy peanut butter caramel layer and coated in melted JOJO's Chocolate makes 8 large or 16 small bars peanut butter filled chocolate bars! 

Ingredients:

Crust:

  • 3/4 cup almond flour

  • 2 tbsp coconut flour

  • 3 tbsp coconut oil

  • 1 tbsp maple syrup

  • Pinch of Salt

    Filling:

    • 1/2 Cup natural peanut butter

    • 1/4 cup maple syrup

    • 1/4 cup coconut oil

    • 1 tsp vanilla extract

    • Pinch of Salt

    Chocolate Layer:

    Directions:

    Crust:

    1. Mix together crust ingredients in a medium bowl until a dough forms.

    2. Pat down into a parchement lined 9x5 loaf pan and bake on 350 for 12 minutes.

    3. Set aside to cool.

    Filling Layer:

    1. In the same bowl, whisk together all filling ingredients until smooth.

    2. Pour over crust and shake to even out.

    Final Steps:

    1. Melt your chocolate layer with 1 tsp of coconut oil in 30 second increments in the microwave.

    2. Pour over the filling and shake to even out.

    3. Freeze for at least two hours, then slice into 8 squares or 16 smaller bars.

    4. Keep stored in the fridge for softer caramel texture.
