Perfect Mother's Day Chocolate Chip Pancakes

Mother's Day is right around the corner. There are so many different ways to show mom you care, but nothing says "I love you mom" quite like homemade chocolate chip pancakes. These perfect chocolate chip pancakes are made with JOJO's Dark Chocolate and only 4 wholesome ingredients. Ingredients:
- 3 ripe bananas, mashed
- 6 eggs
- 1/3 cup coconut flour
- 2 teaspoons vanilla extract (optional)
- 1 bag JOJO's Raspberry Dream Bites, chopped
Directions:
- Combine all ingredients, except for JOJO's, together in a large mixing bowl
- Mix together, but don't over-mix to ensure fluffy pancakes
- Once batter is combined, fold in half of the chopped JOJO's
- Melt coconut oil (or your favorite oil) on a non-stick pan over medium heat
- Once pan is coated in oil, scoop your pancake batter onto the pan
- Flip pancakes once edges start bubbling
- Top with remaining chopped JOJO's
- Serve to mom (or dig in yourself)!
