Cookie Ingredients:
  • 1 cup brown rice flour
  • 1/2 cup rolled oats
  • 1 tablespoon poppyseeds
  • 2 tablespoons chopped JOJO's Peanut Butter Delight
  • 1 teaspoon Himalayan pink salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1/4 cup coconut sugar
  • 1/4 cup coconut oil, melted
  • 3 tablespoons honey
  • 2-3 tablespoons juice and zest from 1 lemon
Frosting Ingredients:
  • 1/4 cup greek yogurt
  • 4 ounces cream cheese at room temperature
  • 2 tablespoons powdered peanut butter
  • 1 tablespoon vanilla protein powder
  • 2 tablespoons honey
    Directions:
    1. Combine dry cookie ingredients in a large bowl
    2. Whisk together wet cookie ingredients in a medium bowl
    3. Once wet ingredients are combined, pour wet mixture into dry and combine
    4. Refrigerate dough for 30-minutes
    5. Preheat oven to 350-degrees and line a baking sheet with parchment paper
    6. Scoop cooled dough and roll into 16 balls
    7. Place balls on cookie sheet and lightly flatten
    8. Bake cookies for 12-minutes or until golden-brown
    9. Remove from oven and cool completely
    10. While cookies are cooling, make frosting by blending all frosting ingredients together until light and fluffy
    11. Stuff cookies with frosting and dig in!
