LEMON POPPYSEED OATMEAL STUFFED COOKIES

Cookie Ingredients:
- 1 cup brown rice flour
- 1/2 cup rolled oats
- 1 tablespoon poppyseeds
- 2 tablespoons chopped JOJO's Peanut Butter Delight
- 1 teaspoon Himalayan pink salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1 egg
- 1/4 cup coconut sugar
- 1/4 cup coconut oil, melted
- 3 tablespoons honey
- 2-3 tablespoons juice and zest from 1 lemon
Frosting Ingredients:
- 1/4 cup greek yogurt
- 4 ounces cream cheese at room temperature
- 2 tablespoons powdered peanut butter
- 1 tablespoon vanilla protein powder
- 2 tablespoons honey
Directions:
- Combine dry cookie ingredients in a large bowl
- Whisk together wet cookie ingredients in a medium bowl
- Once wet ingredients are combined, pour wet mixture into dry and combine
- Refrigerate dough for 30-minutes
- Preheat oven to 350-degrees and line a baking sheet with parchment paper
- Scoop cooled dough and roll into 16 balls
- Place balls on cookie sheet and lightly flatten
- Bake cookies for 12-minutes or until golden-brown
- Remove from oven and cool completely
- While cookies are cooling, make frosting by blending all frosting ingredients together until light and fluffy
- Stuff cookies with frosting and dig in!
