FUDGEY ZUCCHINI BROWNIES

These brownies, covered in gooey peanut butter frosting, are both delicious and healthy at the same time! Packed full of added nutrients and a whole grated zucchini, these fudgey brownies are bound to make your mouth water and your body happy!
Ingredients:
Fudgey Zucchini Brownies:

1 1/2 cups oat flour (I just blended up some oats)

1/2 cup almond flour

1/3 cup @navitasorganics cacao

1 tsp baking powder
-
3/4 cup coconut sugar
-
1/4 tsp flaky sea salt

1 cup + 1/4 cup @enjoylifefoods vegan chocolate chips

1/3 cup oat milk
-
1 tsp vanilla
-
1 flax egg (1 tbsp ground flax + 2 tbsp water)

1 medium zucchini, grated
-
2 tbsp maple syrup
-
2 tbsp coconut oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Peanut butter frosting:

1/2 cup @nancysyogurt oat milk yogurt
-
1/2 cup peanut butter
-
2 tbsp maple syrup
-
1 tsp vanilla
Directions:

Preheat oven to 375 F + melt together coconut oil and 1 cup chocolate until smooth
-
Then create flax egg and sit for 5 minutes
-
In a bowl add in all dry ingredients and stir together, once combined add in grated zucchini and stir until zucchini is coated

Add remaining wet ingredients, including flax egg, to melted chocolate and combine
-
Finally add wet into dry and combine until a thick batter is formed

Pour batter into parchment lined 9x9 pan

Bake in oven for 25-30 minutes

Remove from oven and let cool completely
For frosting:

Combine everything until smooth, then pour over brownies and spread

Chop up some JOJO's Peanut Butter Delight and sprinkle on top
-
Sprinkle a lil flaky sea salt
-
Place in freezer so frosting can set

Cut up and enjoy!
