Tired of the same-old-same-old cookie recipes you're used to? Then you NEED to try these chocolate peanut butter-stuffed ravioli cookies! Not only do these cookies TASTE delicious, but they're also fun to make.

Cookie Ingredients:
  • 1 cup whole wheat pastry flour
  • 1 cup oat flour
  • 1 teaspoon fine sea salt
  • 2 tablespoons coconut sugar
  • 2/3 cups cold vegan butter
  • 4-5 tablespoons ice cold water
  • 1 bag JOJO's Peanut Butter Delight Bites
Chocolate Glaze Ingredients:
  • 1/2 cup JOJO's 
  • 1/2 cup coconut cream
  • 2 tablespoons creamy peanut butter
    Directions:
    1. Preheat oven to 375-degrees and line a baking sheet with parchment paper
    2. Prepare crust by combining flours, salt, coconut sugar, and vegan butter in a food processor
    3. Pulse until combined, scraping down the sides as necessary
    4. Add 4 tablespoons of ice cold water and pulse in between each one until your dough comes together, you know it's ready when you can pinch the dough between two fingers without it crumbling
    5. Turn the dough onto a floured surface, shape into a disc, and cover with a piece of plastic wrap
    6. Use a rolling pin to roll the dough into a large rectangle
    7. Cut into 12 equal squares or rectangles and transfer to the baking sheet
    8. Place 1 JOJO's Chocolate Bite in the middle of half the squares, leaving a 1/4 inch border to seal the edges
    9. Cover with another piece of square dough and press down the edges with a fork
    10. Bake for 20 minutes
    11. While cooling, in a small saucepan, melt the chocolate with coconut cream
    12. Mix together frequently and set aside
    13. Using a spoon, drizzle the melted chocolate and creamy peanut butter onto the cookies
    14. Enjoy!
