CHOCOLATE PUMPKIN PEANUT BUTTER STUFFED DATES RECIPE

Fully embrace the season with these stuffed dates featuring pumpkin, JOJO's dark chocolate, and spices that taste like autumn. This recipe makes the perfect mid-afternoon snack, pre-workout fuel, or tasty nightcap.
Ingredients:
- 6 medjool dates, pitted
- 1/4 cup JOJO's Peanut Butter Delight bites
- 1 tsp coconut oil
- 1/4 cup pumpkin puree
- 2-3 tbsp powdered peanut butter or creamy peanut butter
- 1 dash of pumpkin pie spice
- optional: JOJO's Peanut Butter Delight bites, chopped
- optional: flaked sea salt
Directions:
- Add the JOJO's chocolate bites and coconut oil into a microwave-safe dish and microwave in 15-20 second increments until chocolate is melted
- Mix together the pumpkin puree, peanut butter, and pumpkin pie spice until well combined
- Chop the additional JOJO's Peanut Butter Delight bites
- Stuff each medjool date with 1-2 tsp of the pumpkin peanut butter
- After each date is stuffed, dip them into the melted chocolate and place on a parchment paper-lined cookie sheet
- Top each date with chopped chocolate and sea salt
- Place cookie sheet in the freezer and freeze for 20-minutes
- Enjoy!
