Who doesn't love bread? The answer to this question is "no one"...at least we've never met anyone who doesn't love bread. But, if you have, this delish double chocolate pumpkin bread recipe just might change their mind!
Ingredients:
- 3 eggs
- 1 cup pumpkin
- 1/3 cup full fat coconut milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 2 cups blanched almond flour
- 1/4 cup tapioca flour
- 1/4 cup cacao powder
- 1 teaspoon baking soda
- 1 tablespoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1 pinch of sea salt
- Chopped JOJO's Peanut Butter Delight
Directions:
- Preheat oven to 350°
- Line a loaf pan with parchment paper
- In a large bowl, whisk together the eggs, pumpkin, coconut milk, maple syrup, and vanilla extract
- In a medium bowl, combine the almond flour, tapioca flour, cacao powder, baking soda, pumpkin pie spice, cinnamon, and salt
- Slowly mix the dry ingredients into the wet ingredients until combined
- Pour the combined mixture into your parchment-lined loaf pan
- Sprinkle with chopped JOJO's Peanut Butter Delight
- Bake for 45-50 minutes
