KETO CHOCOLATE CHIP COOKIE MUG CAKE

We've teamed up with our friends over at ChipMonk to bring you a KETO, DAIRY-FREE, and GLUTEN-FREE chocolate chip cookie mug cake recipe. You can make this delicious single-serve treat in under 5-minutes. Plus, it's packed with added protein, and is low in sugar and carbs. Are you ready to dig-in?
Ingredients:
- 1 tablespoon plant-based butter
- 3 tablespoons ChipMonk Chocolate ChipMonk Dry Mix
- 2 teaspoons AlluMonk Sweetener
- 1/2 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- 1 large egg, beaten
- 1 JOJO's Goes Hawaiian Bar, chopped
Directions:
- Melt plant-based butter in a small microwave-safe bowl for 15-seconds to coat base of bowl
- Mix ChipMonk dry mix, AlluMonk Sweetener, and baking powder together in a separate bowl, then add to melted butter
- Add the beaten egg and vanilla extract to the bowl and mix until well-combined, ensuring that all of the dry ingredients are combined with the wet ingredients
- Microwave batter for roughly 90-seconds (make sure to keep an eye on your mug cake to make sure it doesn't overflow!)
- After microwaving, immediately top with a chopped JOJO's Goes Hawaiian Bar for maximum melt-age
- Allow your mug cake to rest and cool for a 2-3 minutes
- Once cooled, eat when you can no longer contain your excitement!
