SALTED DARK CHOCOLATE PISTACHIO QUINOA CRUNCH BARS

Adapted from @ambitiouskitchen, these bars are packed with healthy fats and delicious low-sugar Dark Chocolate, making them the perfect anytime snack.
Base Ingredients:
- 1/4 cup almond butter
- 2 tablespoons + 2 teaspoons maple syrup
- Splash of vanilla extract
- 1/4 cup oats
- 2 tablespoons + 2 teaspoons uncooked quinoa
- 4 teaspoons flax meal
- 4 teaspoons flaxseed
- 2 tablespoons + 2 teaspoons pistachios
- 2 tablespoons cashews
Chocolate Ingredients:
- 2 JOJO's Original Bars
- 1/2 teaspoon coconut oil
- Chopped pistachios
- Sea salt
Directions:
- Over low heat, toast quinoa and oats on the stove for 3-5 minutes
- Mix together nut butter, maple syrup, and vanilla extract in a bowl
- Add all base ingredients together and mix until well-combined
- Press base mixture firmly into the bottom of a lined pan
- Melt together JOJO's Bars and coconut oil until creamy
- Pour melted chocolate on top of the bars and sprinkle with chopped pistachios and sea salt
- Place bars in the freezer until set
- Cut into slices and enjoy!
