There is something so nostalgic and festive about spiced donuts. Maybe it's the smell, maybe it's the memories of farmers markets, or maybe it's just because pumpkin donuts are so good. Regardless, our friend Robin has made it SUPER easy to make your own homemade pumpkin spice donuts with her tasty JOJO's-topped recipe! Dig in!
Donut Ingredients:
- 1 cup gluten-free 1-to-1 baking flour
- 1/2 cup coconut sugar
- 1/4 cup pumpkin puree
- 2 teaspoons vanilla extract
- 1/4 cup melted coconut oil
- 1/2 cup unsweetened nut milk
- 2 teaspoons apple cider vinegar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 2 teaspoons cinnamon
Glaze Ingredients:
- 2 tablespoons nut milk
- 1/3 cup monkfruit powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup JOJO's Peanut Butter Delight, crushed
- Optional: Halloween sprinkles
Directions:
- Preheat oven to 350°F
- Spray two donut pans with nonstick cooking spray and set aside
- Whisk wet ingredients and coconut sugar together in a large bowl
- Mix in dry ingredients and distribute into donut pans
- Bake donuts for 18-20 minutes
- Once donuts are cooled, make the glaze by whisking the milk, vanilla extract, and powdered sugar together in a shallow dish
- Dip the tops of the donuts into the glaze and sprinkle with a few sprinkles and crushed JOJO's Peanut Butter Delight
- Let the glaze set completely before enjoying
