PEANUT BUTTER CHOCOLATE ENERGY BITES

These go-to peanut butter chocolate energy bites use super simple ingredients and are easily enjoyed by the whole family! @restoring_radiance loves to use JOJO's Chocolate in this recipe because of the many added benefits, like being dairy free and low sugar. Because lets face it, sometimes having a low sugar dessert is just what you need!
Ingredients:

1 1/2 cups rolled oats

1 cup peanut butter
-
1/3 cup honey
-
1/4 cup ground flaxseed

2 JOJO's Peanut Butter Delight bars, chopped (or 1/2 cup chocolate chips)

1 tsp vanilla extract

dash of sea salt
Directions:

In a blender or food processor, pulse the rolled oats until they resemble a quick oat type consistency. (You don't HAVE to do this step but I feel like it makes the texture of the balls more doughy and just perfect.)

Pour the oats into a mixing bowl with the rest of the ingredients except the chocolate.

Mix everything together and add in the chocolate.

Mix until combined.

Roll into balls.

Store in the fridge for up to 2 weeks!
Makes about 14 balls
