Peanut Butter Caramel Chocolate Bars

Gluten-Free shortbread cookie crust topped with a creamy peanut butter caramel layer and coated in melted JOJO's Chocolate makes 8 large or 16 small bars peanut butter filled chocolate bars!
Ingredients:
Crust:

3/4 cup almond flour

2 tbsp coconut flour

3 tbsp coconut oil
-
1 tbsp maple syrup
-
Pinch of Salt
Filling:

1/2 Cup natural peanut butter
-
1/4 cup maple syrup
-
1/4 cup coconut oil
-
1 tsp vanilla extract
-
Pinch of Salt
Chocolate Layer:
- 4 JOJO's Peanut Butter Delight bars
Directions:
Crust:

Mix together crust ingredients in a medium bowl until a dough forms.

Pat down into a parchement lined 9x5 loaf pan and bake on 350 for 12 minutes.

Set aside to cool.
Filling Layer:

In the same bowl, whisk together all filling ingredients until smooth.

Pour over crust and shake to even out.
Final Steps:

Melt your chocolate layer with 1 tsp of coconut oil in 30 second increments in the microwave.

Pour over the filling and shake to even out.

Freeze for at least two hours, then slice into 8 squares or 16 smaller bars.

Keep stored in the fridge for softer caramel texture.
