SWEET POTATO BAKED DONUTS

Have your donuts AND your veggies too (that is, if you consider sweet potatoes a vegetable!). These sweet potato baked donuts, made with our Peanut Butter Delight Bars, are a plant-based and low-sugar alternative to the fried dough that "America Runs On". Plus, they're equally as delicious and better-for-you—a major win-win!
Donut Ingredients:
- 1 + 1/4 cup whole wheat pastry flour
- 1/2 cup almond flour
- 1/2 cup coconut sugar
- 2 flax eggs
- 1 teaspoon vanilla extract
- 1/4 cup coconut oil, melted and cooled
- 1 cup sweet potato puree
- 1 teaspoon baking soda
- 1/4 cup dairy-free milk
- Dash of Pink Himalayan Salt
- 2 JOJO's Peanut Butter Delight Bars, finely chopped
Frosting Ingredients:
- Our friend, Robin, used Miss Jones' Vegan Cream Cheese Frosting
Directions:
- Preheat oven to 350-degrees
- Mix together flax eggs, vanilla extract, melted and cooled coconut oil, sweet potato puree, and dairy-free milk together until smooth
- Add in the dry ingredients until well-combined
- Gently fold in chopped JOJO's chocolate bars into donut batter
- Pour the batter into two greased donut pans (about 10 donuts total)
- Bake for 12-17 minutes
- Pour batter into the parchment-lined pan and smooth out the top
- Bake for 15-20 minutes
- Let the donuts cool for about 20-minutes before frosting
- Add sprinkles and enjoy!
