PB&J CHOCOLATE-COVERED RAW BALLS

Quick, easy, delicious—three words that perfectly describe these peanut butter and jelly chocolate-covered raw balls. A little disclaimer, once you eat just one, you may want to eat the whole batch. Don't say we didn't warn you!
Raw Ball Ingredients:
- 1/4 cup creamy peanut butter
- 1/4 cup creamy cashew butter
- 1/4 cup raw honey (or maple syrup if vegan)
- 2 tablespoons coconut oil, melted
- 1/4 teaspoon sea salt
- 1/4 teaspoon vanilla extract
- 2-3 soft dates
- 1 + 1/4 cup quick oats
- 1/4 cup oat flour
- 1/4 cup dried cherries
- 2 tablespoons flax meal
- 2 tablespoons chia seeds
Chocolate Coating Ingredients:
- 1/4 cup JOJO's Peanut Butter Delight
- 1 teaspoon coconut oil
Directions:
- Add everything but the quick oats to a food processor and pulse until well combined and a ball starts to form
- Add in quick oats and lightly pulse to combine
- Remove the blade from the food processor and finish mixing in the oats with your hands
- Line a medium-sized baking sheet with parchment paper and form mixture into 16-20 balls
- Freeze for 20 minutes
- Prepare chocolate coating when the raw balls are done freezing by melting the coconut oil and JOJO's Chocolate together in the microwave
- Dip half of all of the raw balls into the chocolate, place back on the parchment paper, and freeze for another 10 minutes
