CHOCOLATE COCONUT PEACH CAULI-OAT BAKE RECIPE

Ingredients:
  • 2/3 cup rolled oats

  • 1 + 1/3 cup riced cauliflower (frozen or fresh)

  • 1/2 super ripe banana, mashed

  • 1 + 1/4 cup milk of choice

  • 1 tbsp chia seeds

  • 1 egg white (or sub an additional tbsp of chia seeds)

  • 1 tsp cinnamon

  • 1/4 tso vanilla extract

  • 1/2 tsp baking soda

  • 2 tbsp maple syrup

  • 1 juicy peach peach, diced and save 1/4 of the peach to add slices on the top if you’d like before baking

  • 3 JOJO's Goes Hawaiian Bites, cut in half or quartered

Directions:
  1. Preheat oven to 350°F. Spray a medium baking dish with nonstick cooking spray and set aside. You may also line with parchment paper if you’d prefer or grease the pan with coconut oil.

  2. In a medium size bowl, mash the banana until it turns into a puree. Add the wet ingredients into the same bowl and whisk until combined. Mix in the dry ingredients, 3/4 the peach, and pour into the prepped baking dish. Top with the remaining peach slices.

  3. Bake for 45 minutes before adding the JOJO's Bites to the top, bake for an additional 5-10 minutes or until the cauli-oat bake looks cooked on top and JOJO's is melted.

  4. Let cool slightly before dicing in half and serving! Top with goodies and enjoy.

  5. Refrigerate any leftovers for up to 5 days in an airtight container.
